The connection: this current creates a magnetic field that interacts with compatible pots and pans The heat: This interaction creates electrical currents inside the metal of the pan, heating the food quickly while the stovetop stays relatively cool.
Consumer Reports have tested this performance and found that induction is truly the fastest option. They discovered that boiling six quarts of water will approach a boil “2 to 4 minutes sooner than on a gas or electric stove” (Hope, St. John, & Yao, 2025).
This rapid fall in temperature is especially useful when cooking is complete. When the cooktop is off, the flow of electricity to the electromagnetic coils stops. This causes the magnetic field to quickly dissipate, creating the surface to cool down within 1-5 minutes. This makes cooking safer and cleanup easier, since the smooth glass surface can be quickly wiped down.
